Chicken And Penne Pasta
- Ingredients
- 2 tb olive oil
- 2 tb fresh garlic, finely
- 1 chopped
- 2 ts dry oregano
- 2 ts dry basil
- 1 1/2 ts salt
- 3/4 ts black pepper, freshly
- 1 ground
- 1/4 ts cayenne pepper
- 3 c diced canned tomatoes in
- 1 juice
- 2 c heavy cream
- 6 chicken breasts, skinless
- 1 and boneless
- 2 c broccoli, cut into 1-in
- 1 flowerets
- 2 c fresh mushrooms, sliced
- 1 box penne noodles, cooked
- 1 according to package

- In a saucepan, heat the olive oil. Add the garlic, oregano, and
- basil. Saute for 30 seconds. Add the salt, black pepper, cayenne
- pepper, tomatoes and their juice and cream. Bring the sauce to a
- boil. Boil for five minutes, stirring often.
- Broil or grill the chicken breasts until done. Then cut the breast
- into 1 x 1 x 1/4-inch pieces.
- Steam the broccoli until al dente.
- In a very large skillet or saucepan, combine the sauce, chicken,
- broccoli, mushrooms, and cooked pasta. Cook until all of the
- ingredients are heated.
