Rich & Quick Chocolate Pie

  1. -Heat milk until it just begins to bubble around the edges in a medium-size saucepan over medium heat.(Do not let boil.) Remove from heat, and whisk in chocolate chips until melted.
  2. -Cool for about 10 minutes.
  3. -Stir together cold water and cornstarch until dissolved.
  4. -Whisk cornstarch mixture, sweeted condensed milk, eggs, and vanilla into chocolate mixture. Bring to a boil over medium heat, whisking constantly. Boil for about 1 minute until mixture thickens and is smooth. (Be careful not to overcook.)
  5. -Remove from heat, and whisk in butter. Pour mixture into graham cracker crumb crust. Cover and chill for at least 8 hours.
  6. -Just before serving set Cool Whip out to soften. Spread Cool Whip over top of chilled pie evenly.
