Rich & Quick Chocolate Pie
- -2/3 milk
- -1 cup semisweet chocolate chips
- -1/4 cup cold water
- -2 tablespoons cornstarch
- -1 (14-oz.) can sweeted condensed milk(can use low fat)
- -3 large eggs, beaten
- -1 teaspoon vanilla extract
- -3 tablespoons butter or margarine
- -1 ready-made graham cracker crumb pie crust
- -2 cups Cool Whip(can use low fat)
- -Heat milk until it just begins to bubble around the edges in a medium-size saucepan over medium heat.(Do not let boil.) Remove from heat, and whisk in chocolate chips until melted.
- -Cool for about 10 minutes.
- -Stir together cold water and cornstarch until dissolved.
- -Whisk cornstarch mixture, sweeted condensed milk, eggs, and vanilla into chocolate mixture. Bring to a boil over medium heat, whisking constantly. Boil for about 1 minute until mixture thickens and is smooth. (Be careful not to overcook.)
- -Remove from heat, and whisk in butter. Pour mixture into graham cracker crumb crust. Cover and chill for at least 8 hours.
- -Just before serving set Cool Whip out to soften. Spread Cool Whip over top of chilled pie evenly.
