Double Mustard Maple Salmon

  1. Heat oil over low heat. Add mustard seeds, stir to coat with oil. Cover and cook until seeds begin to pop. Turn off heat but keep skillet covered until popping stops. Transfer seeds to a dish and blend with mustard, maple syrup, vinegar, salt and pepper. Add salmon and turn to coat. Marinade in fridge for 20 min.
  2. Prepare broiler. Remove salmon from marinade, reserve marinade. Place salmon on a foil-lined baking pan and spoon mustard seeds from marinade over each salmon fillet. Broil 5 min, cover with foil to prevent seeds from scorching and cook 5 min more or until fish is done.
