Chicken Salad With A Twist
- 12 oz. pkg. small shell macaroni
- 5 c. cooked chicken
- 1 c. Wish-Bone Italian dressing
- 1 c. mayonnaise
- 5 Tbsp. lemon juice
- 1 Tbsp. prepared mustard
- 4 hard-boiled eggs, cut in wedges
- 1 medium onion, chopped
- 1 c. sliced ripe olives
- 2 c. peeled, seeded and diced cucumbers
- 2 c. thinly sliced celery
- 1 tsp. pepper
- salt to taste (if needed)
- Cook macaroni following package directions.
- Mix cooked chicken and Italian dressing with hot macaroni.
- Cool.
- Blend mayonnaise, lemon juice and mustard.
- Stir in chopped onion, olives, cucumber, celery, pepper and salt (if desired).
- Add to macaroni mixture.
- Mix well and refrigerate overnight.
- Serve on lettuce leaf.
- Serves 14 to 16.
