Sweet Potatoes And Apples
- 6 medium sweet potatoes (3 1/2 lbs)
- 1teaspoon salt
- 3/4 cup butter or margarine
- 1 cup light or dark brown sugar, firmly packed
- 1 1/2 cups orange juice
- 2 tablespoons coarsely grated orange zest
- 1/4 teaspoon salt
- 2 large tart cooking apples (Granny Smith), peeled, halved,
- cored and cut in 1/4 inch thick slices
- Scrub and wash sweet potatoes. Place in large saucepan with 1 tsp. salt and water to cover. Over high heat, bring water to boiling, reduce heat, cover and simmer 25 minutes or until potatoes are crisp-tender.
- Drain potatoes and let them cool. Peel and cut crosswise into 1/2 inch thick slices. Set aside.
- Preheat oven to 400 degrees.
- In a medium sized skillet over moderately high heat, melt butter. Add brown sugar, orange juice, orange zest and 1/4 tsp salt. Bring to a boil, stirring constantly until sugar is completely dissolved. Simmer uncovered for 10 minutes to thicken the sauce.
- Add apple slices to the sauce, simmer uncovered, stirring occasionally and turning the slices once. Cook for 5 minutes Remove apples from sauce and set aside.
- In a 2 qt. shallow baking dish, arrange the sweet potato and apple slices in alternate rows. Spoon half of the sauce evenly over all. Reserve remaining sauce. Cover with aluminum foil. ( You may refrigerate for a day and bake after bringing dish back to room temperature.)
- Bake for 25 minutes (400 degrees) Remove foil, baste with remaining sauce. Bake uncovered 15 - 20 minutes more.
