Chicken And Dumplings
- 1 Rotisserie chicken
- 1.5 cups Celery---chopped
- 1 package Fresh sliced mushrooms
- 4 tablespoons Butter
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon celery salt
- 16 ounces Cream of chicken heart healthy
- 1 quart chicken broth
- 8 ounces McLibb's southern dumplings
- Pull all chicken meat from bone and cut into small chunks
- saute celery and mushrooms in butter in a large skillet with salt, pepper, and celery salt
- mix chicken broth and cream of chicken soup in large pot (preferably non-stick but metal will work; you just have to stir more often to avoid sticking) bring to boil
- begin adding the McLibb dumplings (breaking to size of your preference) to soup pot
- simmer with dumplings for about 10 minutes then add chicken and simmer another 5 minutes, then and celery and mushroom saute
- Serve immediately
