Italian Chicken Stew
- 3 cloves Fresh Garlic, minced
- 11/2 Lbs Chicken, cut into strips
- 1 Tbs Olive Oil
- 4 Potatoes, cubed
- 1 to 2 Green Peppers, small cubes
- 1 Lb Fresh String Beans, bite size
- 1 Large can Diced Tomatos
- 2 Large cans Plain Tomato Sauce
- Fresh Basil, Salt, Pepper, Oregano, and other italian seasonings to taste.
- 1 Lb of Pasta, your choice of style
- Saute Chicken and Garlic in Olive Oil bottom of 6 Qt saucepan until Chicken browns. Add Potatos and Green Peppers, cover and cook for 5 mins. Add String Beans, cook for 5 mins.
- Add cans of Diced Tomatos, Tomato Sauce and spices.
- Bring to Boil
- Lower heat to a simmer
- Cook for 35 minutes
- Cook Pasta as per directions on box
- Serve over Pasta
