Pork Larb Lettuce Wrap

  1. Filling:
  2. in a skillet, heat veg oil. add garlic; cook over moderately low heat, stirring a few times until golden brown (+/- 1 minute).
  3. Add sugar, cook for 20 seconds
  4. Add pork and cook over moderately high heat until no pink.
  5. Add fish sauce, season w salt & pepper
  6. Toast Rice:
  7. med skillet over moderate heat, shake pan until browned +/- 3 min, cool, grind to a powder
  8. Dipping Sauce:
  9. combine all ingredients, stir until sugar dissolves
  10. Serve:
  11. off heat, add "Serve" ingredients to filling, sprinkle with ground rice
  12. spoon filling into lettuce leaves, add desired dipping sauce and eat like a taco
