Pork Larb Lettuce Wrap
- Filling:
- 1 T Veg oil
- 4 garlic cloves finely minced
- 1 t sugar
- 1/2# ground pork
- 1 t fish sauce
- salt & pepper
- 1 T toasted long grain rice
- Dipping Suace
- 2 T fresh lime juice
- 2 T fish sauce
- 1 T sugar
- 2 thinly sliced Thai Chiles
- 1 T water
- Serve:
- 1 thinly sliced Thai Chile
- 1/4 thinly sliced red onon
- 1/4 c each torn thai basil, genoa basil, mint
- Boston lettuce leaves
- Filling:
- in a skillet, heat veg oil. add garlic; cook over moderately low heat, stirring a few times until golden brown (+/- 1 minute).
- Add sugar, cook for 20 seconds
- Add pork and cook over moderately high heat until no pink.
- Add fish sauce, season w salt & pepper
- Toast Rice:
- med skillet over moderate heat, shake pan until browned +/- 3 min, cool, grind to a powder
- Dipping Sauce:
- combine all ingredients, stir until sugar dissolves
- Serve:
- off heat, add "Serve" ingredients to filling, sprinkle with ground rice
- spoon filling into lettuce leaves, add desired dipping sauce and eat like a taco
