Quick Sweet & Sour Meatballs
- 1/2 of 38oz. pkg. of Mama Lucia's cocktail size meatballs
- 3 sweet peppers (1 each of green, yellow, orange looks great!) chopped in 1" chunks
- 1 sweet onion, choppped in 1" chunks
- SAUCE:
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 can pineapple chunks WITH juice (no sugar added)
- 3/4 cup water
- 3/4 cup apple cider vinegar
- 1/2 tsp. salt
- 3 tbls. cornstarch, dissolved in the water
- Saute onion in olive oil until lightly browned. Remove from heat and add chopped peppers. Set aside.
- Drain pineapple, reserving juice.
- Combine pineapple juice, sugars, vinegar, and salt in a large saucepan.
- Dissolve cornstarch in the water and stir into pan.
- Heat over med-high heat, stirring constantly until mixture is clear.
- Add meatballs, peppers, onion, and pineapple chunks. Simmer for 30 minutes.
- Serve with rice.
