Lima And Ham Salad
- 1/2 c. buttermilk Ranch salad dressing
- 1 (16 oz.) pkg. frozen lima or baby beans, cooked and drained
- 3/4 lb. tiny new potatoes, cooked and sliced
- 1/4 c. sliced celery
- 1/4 c. sliced green onion
- 2 Tbsp. snipped fresh parsley
- 1 Tbsp. snipped garlic chives
- 2 c. snow peas or sugar snap peas, cut into 1-inch pieces
- 1 c. chopped cooked ham
- Combine dressing, beans, potatoes, ham, celery, green onion, parsley and chives in a large salad bowl.
- Cover; refrigerate for 2 hours or overnight.
- Before serving, stir in snow peas or sugar snap peas.
- To serve, if desired, place halved tomato slices on a platter.
- Top the salad mixture, or mound portions of salad on individual lettuce lined plates.
- Makes 6 servings.
