Vegetarian Chili
- 2 medium onions, chopped
- 1 red bell pepper, chopped
- 1 jalapeno pepper, chopped
- 8 oz. fresh mushrooms, chopped
- 3 T pure chili powder
- 1 T cumin
- 1 t red pepper flakes
- 2 t garlic powder
- 1 t dried oregano
- 2 jars crushed tomatoes (24 oz)
- 2-3 T tomato paste
- 1 cup texturized vegetable protein
- 1/4 cup water
- 1 can kidney or other beans
- Optional: grated cheddar cheese, scallions, sour cream
- 1. Saute onions, peppers and mushroom until all soft and wilted.
- 2. Add spices and stir about 1 minute.
- 3. Add tomatoes, tomato paste, TVP and water. Let simmer 2 hours. Add water or vegetable broth if it gets too thick.
- 4. Add beans before serving.
- 5. Put out optional toppings and serve over rice, corn bread or spaghetti.
