Saucy Pork And Peppers

  1. Squeeze juice from limes, reserving peel.
  2. In a small bowl, combine lime juice, lime peel, soy sauce, oregano, thyme, cayenne pepper, garlic, parsley and Bay leaf; blend well.
  3. Place pork cubes in a plastic bag or non-metallic bowl.
  4. Pour lime mixture over pork, turning to coat.
  5. Seal bag or cover dish; marinate at least 2 hours or overnight in the refrigerator, turning pork several times.
  6. Remove lime peel, parsley sprigs and Bay leaf from marinade and discard.
  7. Remove pork from marinade, reserving marinade.
  8. Drain pork well.
  9. Heat oil in large skillet over high heat.
  10. Add brown sugar; stir until sugar is dissolved.
  11. Add pork cubes; cook and stir about 5 minutes or until pork is browned. Reduce heat to low.
  12. Add onion, tomatoes, bell peppers and reserved marinade; simmer 10 to 15 minutes or until pork is tender.
  13. Makes 4 servings.
