Steamed Jam Pudding

  1. Grease a pudding basin or steamer. Spoon
  2. jam into the base. Beat butter, sugar and
  3. vanilla using an electric mixer until light and
  4. fluffy, beat in eggs one at a time, until well
  5. combined, fold in sifted flour and milk doing
  6. this in two batches, spread mixture over jam,
  7. cover the steamer or pudding basin with a
  8. sheet of baking paper and foil over the top
  9. and press firmly.
  10. Place the basin into a large saucepan or
  11. boiler, boil covered for about 1 1/2 hours or
  12. until cooked. Stand for 10 minutes the turn out
  13. onto a plate. serve with vanilla custard.
