Graham Crackers Homemade
- 8 oz stone ground whole wheat flour or graham flour (like Arrowhead Mills)
- 2 oz AP flour
- 3 oz Dark Brown Sugar
- 3/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/8 tsp Cinnamon
- 3 oz cold Butter cut into chunks
- 2 oz (1/4 cup) Honey
- 1 to 2 oz Milk
- 1/2 tsp Vanilla
- Combine flours, baking powder, soda, salt and cinnamon in food processor just until combined. Add butter and processes until incorporated. With machine running add honey, milk and vanilla. Start with 1 oz milk, add up to 2 oz just until mixture comes together and there is no dry flour left.
- Wrap mixture in plastic wrap, and place in the fridge for about 30 minutes.
- Heat oven to 350 degrees.
- Cut sheet of parchment to fit large baking sheet. Place dough on sheet, cover with fresh sheet of plastic wrap and roll until even thickness about 1/8 inch. Remove plastic wrap, place parchment with dough on baking sheet and cut into squares with pizza slicer. Dock with a fork. Optional: Sprinkle with cinnamon sugar mixture.
- Bake 20-25 minutes. Let cool on baking sheet, then break apart crackers.
