Spicy All-Purpose / Breakfast Sausage

  1. Mix all ingredients thouroughly by hand or with wooden spoon in medium-large bowl. Care should be given to equal distribution of ingredients.
  2. For patties, moisten hands with water and form mass into approx. 3 in. roll, then wrap (roll into) several layers of plastic wrap, place in zip-close plastic bag and freeze. To cook, remove from zip-close bag and either remove plastic wrap or cut right through with very sharp straight-edged knife for approx. 1/3 to 1/2 in.-thick patties. Fry in melted shortening or lard over medium heat, turning frequently until golden brown, and drain / keep warm on paper towels in low oven until served.
  3. For sausage links, fill casings to desired link size with sausage mass, and freeze in serving-sized portions in zip-close bags. To cook, fry in melted shortening or lard over medium heat, turning frequently until golden brown. Drain / keep warm on paper towels in low oven until served.
  4. Freezing not necessary if consuming directly. Simply moisten hands with water and form patties or links to taste.
  5. Serve with eggs & toast or bread, or pancakes / waffles (or both).
  6. Also tastes great on pizza!
  7. * Remove remnants of plastic wrap before cooking.
