Angel Hair Pasta With Vegetables
- 1/4 cup margarine
- 2 cups sliced broccoli flowerets
- 1 cup thinly sliced carrot
- 1/2 cup sliced green onions
- 1 Tablespoon dried basil
- 2 cloves garlic, minced
- 2 cups sliced fresh mushrooms
- 1/2 cup dry white wine
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 8 ounces angel hair pasta uncooked
- 3 Tablespoons grated Parmesan cheese
- 1) Place margarine in a large skillet; place over medium heat until hot. Add broccoli and next 4 ingredients; saute 5 minutes or until vegetables are crisp-tender. Add mushrooms, wine, salt, and pepper; cook 2 minutes or until mushrooms are tender. Remove from heat; set aside, and keep warm.
- 2) Cook pasta according to package directions, omitting salt and fat. Drain.
- 3) And vegetable mixture and cheese to pasta; toss lightly.
