Easy Chinese Chicken Salad

  1. Cut lettuce and cucumber into bite-sized pieces.
  2. Cut green onions into 1/2-inch pieces (separate green tops from white bottoms).
  3. Cut Chinese parsley into 1/2-inch pieces (separate leaves from stems).
  4. Completely cover chicken in pot with water. Add in white bottoms of green onions, stems of parsley and dash of salt.
  5. Boil for 1/2 hour.
  6. Remove chicken to cool.
  7. Strain liquid to have clear chicken stock.
  8. Cut chicken into bite-sized pieces. Put lettuce, cucumber, green onions, parsley, peanuts and chicken into large container.
  9. Add Oriental dressing and toss completely so dressing is well spread.
  10. Add won ton chips to top.
  11. Serve.
