Peppered Lamb Loins With A Garlic And Dark Chocolate Sauce

  1. 1. Preheat oven to 200 F
  2. 2. Coarsely crush peppercorns and sprinkle over lamb with salt
  3. 3. Heat oil in a large frying pan until very hot. Add lamb and cook 4-5 minutes per side. Transfer to dish and keep warm in oven
  4. 4. Remove the pan from heat add the garlic and stir. Return the pan to low heat and cook, stirring until the garlic just begins to brown. Pour in stock stirring to deglaze pan and bring to boil. Boil until the stock is reduced to about 1/4 cup then add chocolate stirring until melted
