Diced Chicken With Cashews

  1. Heat 2 tablespoons of olive oil in wok until hot. Put in bamboo shoots and peppers. Stir fry until hot. Remove with slotted spoon. Then put marinated chicken into hot wok. Quickly toss and turn. When chicken is cooked add gravy mixture. When thickeed, return vegetables. Mix well, put/spoon chicken/vegetable mixture on serving platter and top with cashers. Serve over hot rice.
