Diced Chicken With Cashews
- 2 chicken breast diced; marinate is below mixture:
- 1 tablespoon low sodium soy sauce
- 1 tablespoon waer
- 1/8 teaspoon white pepper
- 1 teaspoon corn starch
- 1 teaspoon olive oil
- Combine gravy ingredients in small bowl:
- 1/4 teaspoon cayenne pepper
- 1/4 cup chicken broth
- 1 1/2 teaspoon olive oil
- 1 1/2 teaspoon cornstarch
- 1 teaspoon sugar
- Cut up vegetables for stir fry:
- 1/4 cup bamboo shots; diced
- 1/4 cup green bell pepper; diced
- 1/4 cup red bell pepper; diced OR 1 1/2 ounce jar sliced pimientoes
- Topping:
- 1/4 cup cashew pieces
- Prepare rice to serve with meal
- Heat 2 tablespoons of olive oil in wok until hot. Put in bamboo shoots and peppers. Stir fry until hot. Remove with slotted spoon. Then put marinated chicken into hot wok. Quickly toss and turn. When chicken is cooked add gravy mixture. When thickeed, return vegetables. Mix well, put/spoon chicken/vegetable mixture on serving platter and top with cashers. Serve over hot rice.
