Sweet Potato Souffle

  1. Preheat oven to 325u0b0.
  2. Place sweet potatoes in large mixer bowl and beat until smooth.
  3. Add remaining ingredients except egg whites; blend until smooth.
  4. Beat egg whites in small mixer bowl with clean beaters at medium speed until stiff but not dry.
  5. Fold into potato mixture.
  6. Pour into 8-inch nonstick baking pan and bake uncovered 50 to 60 minutes until golden and set.
  7. Makes 6 servings.
