Sweet Potato Souffle
- 1 (40 oz.) can sweet potatoes, drained
- 1 tsp. grated lemon peel
- 1/3 c. powdered milk or skim milk
- 2 Tbsp. all purpose flour
- 3/4 tsp. baking powder
- 1 Tbsp. apple juice concentrate
- 1/4 tsp. cinnamon
- pinch of cloves
- 1 tsp. vanilla extract
- 1 tsp. fresh lemon juice
- 2 egg whites
- Preheat oven to 325u0b0.
- Place sweet potatoes in large mixer bowl and beat until smooth.
- Add remaining ingredients except egg whites; blend until smooth.
- Beat egg whites in small mixer bowl with clean beaters at medium speed until stiff but not dry.
- Fold into potato mixture.
- Pour into 8-inch nonstick baking pan and bake uncovered 50 to 60 minutes until golden and set.
- Makes 6 servings.
