Ivy'S Spinach Salmon Mushroom Pie
- 2 cans drained Boneless Skinless Salmon
- 1/4 medium red onion Diced fine
- 1/4 large Bell Pepper Diced fine
- 1/2 cup portobella mushrooms chopped
- 1/2 cups crushed oyster soup crackers or saltines
- 1/3 cup itailan bread crumbs
- 1 small frozen box package of chopped spinach, thawed and drained (To thaw, heat in microwave in box for 2 minutes or so, Put spinach on paper towels to squeeze out water)
- 1 egg
- 2 tablespoons olive oil
- 1 tablespoon melted butter
- 3-4 tablespoons fat free sour cream
- 3/4 cup or 1 cup reduced fat shredded cheese or 4 slices provolone chopped up (Use as much cheese as you want)
- Salt and pepper to taste
- 1 tsp Dill weed
- Mix all ingredients well with fork.
- Top with a little more shredded cheese and pepper
- Bake at 350 degrees until done- 20-30 minutes or until bubbley.
