Beef With Tomatoes And Peppers
- 1 lb. top sirloin, sliced 1/4-inch strips
- 1/2 lb. pork, sliced 1/4-inch strips
- 5 Tbsp. soy sauce and 2 Tbsp. oil
- 3 Tbsp. cornstarch
- 3 Tbsp. brown sugar
- 2 Tbsp. minced fresh ginger
- 3 cloves garlic
- salt and pepper to taste
- 1 Tbsp. peanut oil
- 2 medium onions, cut 1/2 moons
- 2 stalks celery, sliced diagonally
- 3 green peppers, sliced
- 1 c. mushrooms
- 3 large tomatoes, cut in 1/8's
- 3 green onions, chopped
- Combine first 6 ingredients with meat.
- Marinate for 15 minutes.
- Drain; reserve marinade.
- Heat wok; add peanut oil. Sear meat quickly over high heat.
- Remove meat.
- Add oil if needed to stir-fry next 4 ingredients.
- Cook until tender-crisp.
- Add meat and marinate tomatoes and green onions.
- Stir until heated through and slightly thickened.
- Serve over rice.
