Lentil Burgers

  1. saute the veggies in a non-stick pan until slightly soft (5-7 minutes) over medium heat. Add garlic and all seasonings.
  2. Scrape into large bowl, add lentils. Mash slightly with wooden spoon. Let cool to room temp.
  3. Add egg if desired. Add oats and mix well. Season with salt and pepper.
  4. Mixture can now be formed into patties and frozen or pan fried in a non-stick skillet until browned and holds together.
  5. Great on bread or just on top of some greens. Can serve with traditional "burger" condiments and toppings - or try some goat cheese, roasted red peppers and arugula for a goumet twist.
