Lentil Burgers
- 2 cups cooked lentils
- 1/4 cup each chopped celery, mushrooms, chopped carrots
- minced garlic (depending on taste)
- 1 tablespoon worchestershire sauce
- 1 tsp mustard
- 1 egg (or omit for vegan)
- 1/2 c rolled oats
- 1 tsp chili powder
- 1tspn cumin
- hot pepper sauce to taste (if you like)
- saute the veggies in a non-stick pan until slightly soft (5-7 minutes) over medium heat. Add garlic and all seasonings.
- Scrape into large bowl, add lentils. Mash slightly with wooden spoon. Let cool to room temp.
- Add egg if desired. Add oats and mix well. Season with salt and pepper.
- Mixture can now be formed into patties and frozen or pan fried in a non-stick skillet until browned and holds together.
- Great on bread or just on top of some greens. Can serve with traditional "burger" condiments and toppings - or try some goat cheese, roasted red peppers and arugula for a goumet twist.
