Tropical Paradise Halibut With Mango Salsa
- Mango Salsa
- 2 mangoes, chopped
- 1 papaya, chopped
- 4 leaves fresh basil, chiffoned
- 1/4 cup onion, diced
- 1/4 teaspoon jalepeno, minced
- 1 teaspoon lime juice
- salt and pepper to taste
- Tropical Paradise Halibut
- 4 fresh Halibut steaks, 1-inch thick
- 1 cup bread crumbs
- 1 teaspoon oregano leaves
- 1 teaspoon fresh thyme leaves, minced
- 2 teaspoons paprika
- 3 tablespoons parsley
- 1 1/2 teaspoon granulated garlic (or 1 teaspoon garlic salt)
- salt and pepper
- Preheat grill for medium heat. Adjust grate/rack height to between 3-4 inches from heat source. Oil the grill rack well to avoid the fish sticking to the rack.
- Toss all the ingredients for the Mango Salsa in a medium bowl and let sit for 15 minutes.
- Meanwhile, combine the bread crumbs, oregano, thyme, paprika, parsley, garlic and salt and pepper in a shallow dish. Dredge each halibut steak in the dry mixture. When all the steaks are breaded, grill the halibut for 5-7 minutes per side or until the fish flakes easily. Do not overcook or the fish will be dry! Top halibut with the mango salsa and serve.
