Cold Baked Fish

  1. Scale and gut fish- keep head on
  2. Clean fish thoroughly under
  3. cold running water
  4. Rub inside and ouside with cut
  5. lemon
  6. Sprinkle inside and ouside with
  7. salt, pepper and small
  8. amount of Old Bay
  9. Place chopped scallions, sliced
  10. garlic, Tarragon in cavity
  11. Sprinkle with white wine
  12. Wrap in 4-5 layers of foil and
  13. place on cookie sheet
  14. Bake in preheated 350o oven for 1 hour, check at 45 min.
  15. Cool thoroughly
  16. Decorate with layer of cream cheese and thinly sliced lemons (scales)
  17. Chill for 1 hour or more
  18. Serve whole on bed of greens
