Cold Baked Fish
- Whole grouper 5 lbs (haddock also suitable)
- White pepper
- Salt
- Old Bay seafood seasoning
- Lemons
- Tarragon
- Garlic cloves 2-3 sliced
- Scallions 5-6 chopped
- White table wine-1 cup
- Cream cheese
- Parsley
- Scale and gut fish- keep head on
- Clean fish thoroughly under
- cold running water
- Rub inside and ouside with cut
- lemon
- Sprinkle inside and ouside with
- salt, pepper and small
- amount of Old Bay
- Place chopped scallions, sliced
- garlic, Tarragon in cavity
- Sprinkle with white wine
- Wrap in 4-5 layers of foil and
- place on cookie sheet
- Bake in preheated 350o oven for 1 hour, check at 45 min.
- Cool thoroughly
- Decorate with layer of cream cheese and thinly sliced lemons (scales)
- Chill for 1 hour or more
- Serve whole on bed of greens
