Banana And Walnut Tarts

  1. Preheat oven to 180 c.
  2. Cut 2 x 12 cms circles from each piece of pastry.
  3. Lightly score a 1 cm border around the edge of each pastry circle.
  4. Place on lined baking tray and refrigerate while making the filling.
  5. Filling:
  6. Mix butter and both sugars and cinnamon with a wooden spoon until smooth.
  7. Beat in walnuts and egg to make a thick paste.
  8. Spread two tablespoons of walnut topping on each pastry circle inside border.
  9. Slice bananas 1 cm thick and arrange 8-9 slices over the top slightly overlapping over the top.
  10. Brush border with egg yolk.
  11. Sprinkle entire tart with a little caster sugar.
  12. Bake 10-12 mins.
  13. Turning for even browning, until puffed and golden.
  14. Cool 5 mins.
  15. Dust with icing sugar.
  16. Serve with cream or ice cream and passionfruit syrup.
