Sweet Potato Sloppy Joes
- 2-3 sweet potatoes
- 1 large onion, chopped
- 2 green bell peppers, chopped
- 4 tbs. tomato paste
- 3 tbs. water
- 4 carrots, finely chopped or grated
- 2 lb. ground protein
- 28 oz. can tomato sauce
- agave syrup or brown sugar to taste
- 3 tbs. apple cider vinegar
- 3 tbs. dijon mustard
- salt, pepper, garlic powder, etc.
- Heat a large skillet over medium. Add onion and peppers, cooking for about 5 minutes or until soft. Add tomato paste, water and carrots, cooking for another 2 minutes. Add ground meat and break up with a wooden spoon. Cook until meat is no longer pink, stirring occasionally to keep it from sticking.
- Add tomato sauce, sweetener, vinegar, spices and mustard. Allow to come to a low boil, then lower the heat and cover. Cook for 10-15 minutes, stirring a couple of times.
- Taste for seasoning.
