Hungry-Man Casserole
- 1 lb. ground beef
- 1 large onion, chopped
- 2 cloves garlic, chopped
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 1 tsp. salt, divided
- 1/4 tsp. pepper, divided
- 1 1/2 lb. all-purpose potatoes, peeled, thinly sliced, divided
- 1 oz. grated Parmesan cheese (1/4 c.)
- 1/2 c. beef broth
- Preheat oven to 400u0b0.
- In skillet, cook beef 3 minutes or until no longer pink. Remove to platter with slotted spoon.
- Add onion to skillet.
- Cook 3 minutes until softened.
- Return meat to skillet. Stir in garlic, basil, oregano, 1/2 teaspoon salt and 1/8 teaspoon pepper.
- In 2-quart baking dish, spread 1/3 meat mixture. Cover meat with 1/3 of the potato slices.
- Sprinkle 1 tablespoon cheese, 1/4 teaspoon salt and pepper on potatoes.
- Repeat for 2 remaining layers.
- Pour broth over casserole.
- Bake, uncovered, 1 hour
- until potatoes are tender.
- Makes 6 servings.
