Wendy'S Fabulous Mussels
- 5 pounds cleaned mussels
- 1/4 cup butter
- 1/4 soya sauce dark
- juice 1 lime
- 1/2 cup heavy cream
- 1/2 cup white wine
- 6 large cloves garlic sliced thin
- 1 medium red onion sliced thin
- small bunch of corriander torn
- 2 cans stewed tomatoes
- 4-6 tablespoon sesame oil
- 4-6 hot chile sauce
- salt 1 teaspoon
- pepper 1 tablespoon
- saute garlic and onion until soft
- add stewed tomatoes
- salt/pepper
- add wine
- add soya sauce
- add butter
- juice of one lime
- add chile sauce
- add cream
- bring to simmer until reduces to a semi thick sauce about 45 minutes
- add sesame oil, corriander and mussels, simmer until mussels
- open. This is when you can add crumped blue cheese if you like.
