Molasses Cranberry Cookies
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground ginger
- .75 tsp. ground cinnamon
- .5 tsp. salt
- .5 tsp. ground cloves
- .75 cup sugar
- .5 cup butter, softened
- .25 cup full-flavored molasses
- 1 egg, slightly beaten
- .5 tsp. freshly grated orange peel
- .5 cup chopped sweetened dried cranberries
- Turbinado (raw) sugar
- 1. Heat oven to 350 degrees. Combine flour, baking soda, ginger, cinnamon, salt and cloves in medium bowl; set aside.
- 2. Combine sugar and butter in large bowl; beat at medium speed until well mixed.
- 3. Add molasses, egg and orange peel; continue beating until well mixed. Reduce speed to low, gradually add flour mixture to butter mixture, beating well after each addition. Stir in dried, sweetened cranberries.
- 4. Place turbinado sugar into small bowl. Shape dough into 1.25 inch balls; dip tops into sugar.
- 5. Place 2 inches apart onto ungreased cookie sheets. Bake for 10 to 13 minutes or until set.
