Salsa Salad
- SALAD:
- 1 can corn, drained
- 1 can black beans, drained
- 1 can chopped tomatoes with chilis
- 2 green onions chopped
- 1/3 Cup of chopped green or red pepper
- 1 Tsp of chopped fresh cilantro or 1/2 Tsp dry
- 1 or 2 Tsp of chopped pickled jalapeno (to taste)
- DRESSING:
- 1/2 Tsp of taco seasoning
- 2 Tsp of juice from jalapeno jar
- 1/4 Cup sugar
- 1 Tsp of lime juice
- 1/3 Cup veg oil
- 1/3 Cup apple cider vinegar
- Stir all ingedients of salad together in a large bowl.
- Stir together dressing ingredients and pour over salad mixture. Stir together, cover and refigerate one day.
- Serve with corn chips as a dip.
- Or on a lettuce cup with a sprig of cilantro and a slice of avacado, as a side salad.
