Brown Sugar Caramel Apple Crisp
- topping:
- 1 1/2 cups matzo meal
- 2/3 cup sugar
- 1/2 cold margarine or butter, melted
- 1 tsp ground cinnamon
- Filling:
- 4 lbs apples
- 2 TBs fresh squeezed lemon juice
- 1/2 cup sugar
- 2 tsp ground cinnamon
- Caramel:
- 1 cup firmly packed brown sugar
- 1/2 whipping cream or non-dairy coffee creamer
- 1/4 cup butter
- topping:
- combine ingredients in bowl and stir well, set aside.
- filling
- peel and core apples. cut into 1: chunks and transfer to large bowl. add remaining ingredients and toss. transfer to baking dish. Using your hands, crumble topping over the apples. bake 350 1 hour until topping is golden and apples are bubbly.
- caramel:
- combine ingredients in saucepan over med heat. cook, stirring until sugar is dissolved. remove from heat to cool.
- serve the crisp with caramel on the side or pour over.
