Carrot Cake With Cream Cheese Frosting
- 1 1/2 cup flour
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 2/3 cup vegetable oil
- 2 eggs
- 1 cup grated carrot
- 1/2 cup crushed pineapple with syrup
- 1 tsp vanilla
- 1 cup chopped walnuts or pecans
- Cream Cheese Frosting
- 1 3 oz package cream cheese
- 1 Tablespoon butter
- 1 tsp vanilla
- 2 cups powdered sugar
- 1/2 cup chosed walnuts or pecans
- Mix together all cake ingredeints until moistened. Pour into 9 x 9 x 2 inch pan and bake at 350 F for 35 minutes.
- Cool in pan for 5 minutes. Turn out of pan onto wire rack and cool completely. Frost.
- Frosting:
- Mix cream cheese, butter and vanilla until smooth. Gradually mix in powdered sugar - 1/2 cup at a time. Fold in nuts.
