Panko-Crusted Chicken Breast

  1. Heat oven to 400u0b0
  2. Heat olive oil in skillet on low, saute onions about 30 minutes or until golden
  3. brown. In meantime, season chicken with s & p. Combine panko, Parmesan & parsley. Dredge chicken in flour, dip in eggs and coat in panko mixure. Over medium heat brown chicken on both sides with a little Olive oil, abouat 2 - 3 minutes.
  4. Place on baking sheet lined with parchment. Top with caramelized onions, slice of tomato, a few slices of portobellos and a slice of mozzarella. Bake 15 minutes
