Nutrisystem Crusted Pesto Broccoli
- 1 large head Broccoli
- 1 tbsp. + 1 tsp. Olive oil
- 1/2 oz. Basil, fresh leaves only, minced
- 5-7 large cloves garlic, fresh, minced
- 8 tbsp. parmesan cheese, shredded
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1 tbsp. pimentos, optional garnish
- 1. Cut broccoli florets and stems into pieces about the size of a ping-pong ball. Place in microwave safe bowl, add 1 tbsp. water, cover with plastic wrap and steam for 1 to 2 minutes. Do not overcook.
- 2. Remove broccoli from microwave and drain well. Blot dry with paper towel. Cool slightly.
- 3. Drizzle olive oil over broccoli, tossing to coat. Blend basil, garlic, Parmesan and spices together. Sprinkle over the broccoli and toss to coat each broccoli piece with this crusting.
- 4. Heat large skillet over high heat. Add crusted broccoli and all spices left in the bowl to skillet and stir-fry, browning edges of the florets and stems.
- 5. Serve hot on large platter.
