Romano Bean Tacos
- 1 can Romano beans
- 1 tsp salt
- 1/2 t turmeric
- 2 T olive oil
- 1-2 cloves of garlic, crushed
- 1/2 package of taco seasoning
- 3-5 T water
- 1 t cumin
- 1/2 t hot pepper
- salt and pepper to taste
- 1 avocado, sliced
- 1 cup grated cheese
- 1 sliced tomato
- 6 warm tortillas (whole wheat)
- Rinse the can of romano beans in cold water. Add to a pot with salt and tumeric and cover in water. Boil for 15-30 minutes until the beans are soft. Drain.
- Heat oil and garlic in a frying pan at medium heat. Add beans, along with the seasonings and water (add more water if needed). Heat until the water has been absorbed.
- Spread 1/6 of the bean mixture on the tortilla and serve with the toppings. Add what you like and roll it up at the table.
- Other suggested toppings: stir-fried greens

- sour cream/plain yoghurt
