Quick Microwave Lasagna
- 1 lb. lean ground beef
- 1 (15 1/2 oz.) jar spaghetti sauce
- 1/2 c. water
- 8 uncooked lasagna noodles
- 2 c. cottage cheese
- 3 c. Mozzarella cheese (12 oz.)
- 1/2 c. grated Parmesan cheese
- Brown ground beef.
- Drain.
- Add sauce and water.
- Spread 1/3 mixture onto lightly greased 12 x 8 x 2-inch microwavable dish. Put 4 uncooked noodles on sauce.
- Layer 1 cup cottage cheese and 1 cup Mozzarella cheese over noodles.
- Top with 4 noodles, cottage cheese and Mozzarella cheese (1 cup each).
- Then add remaining sauce.
- Sprinkle with Parmesan cheese.
- Cover tightly with plastic wrap with a small corner uncovered to steam.
- Microwave at Medium for 32 to 35 minutes.
- Turn after 15 minutes.
- Uncover after 35 minutes and sprinkle with remaining 1 cup Mozzarella cheese and microwave on Medium for 2 minutes.
