Aba'S Arroz Con Pollo

  1. make broth with chicken carcass if desired
  2. mince garlic
  3. chop onions medium
  4. chop red pepper medium
  5. heat oil and add onions. when starting to turn yellow
  6. spread around pan, creating space in middle and add garlic
  7. when garlic soft, add red pepper and stir
  8. stir frequently and when ready as all is starting to blend together
  9. add tomatoes and keep stirring frequently
  10. after about 3 minutes, add chicken pieces (4 drumsticks, 4 thighs)
  11. wait till chicken starts browning and turn over
  12. if onion mixture starts to overcook remove while finishing browning the chicken
  13. add spices to broth and heat up in separate pot for 30 minutes
  14. once chicken browned somewhat, add broth and wine or water for 3 1/2 cups
  15. stir just a little distributing the rice (add onions mixture if it had been removed)
  16. over medium heat, cover once liquid is boiling, and try not to remove cover or stir.
  17. when almost done, add slices of roasted red pepper.
  18. remove from flame and let sit for 10 minutes.
