Oia Salad
- 1 large head of lettuce (your choice). Recommend leaf lettuce, not spring mix.
- 1 cup cherry tomatoes
- 1 English cucumber
- 1 pomegranate
- 6-8 Calimyrna dried figs
- 1/2 cup pine nuts roasted
- 1 cup feta cheese
- Mayonnaise (1 cup)
- 1/4 milk
- Wash lettuce and cut into ribbons.
- Cut cherry tomatoes in half.
- Slice pomegranate and de-seed. Collect 1 cup of seeds.
- Slice figs into small chunks. Cut enough to make 1 1/2 cups.
- Toss all ingredients into large salad bowl. Mix milk and 1 cup mayonaise so that mixture pours easily. Toss salad lightly with dressing.
- Add pine nuts and crumbled feta cheese. Toss salad lightly one more time. Add more dressing if necessary.
- Divide into 8 portions and serve.
