Baked Pork Chops
- 4 thin pork chops
- 1 Tbsp. salad oil
- 1 c. sliced onion
- 1 clove garlic, crushed
- 1 (1 lb.) can tomatoes
- 1/2 tsp. dried thyme leaves
- 1 bay leaf, crumbled
- salt
- 1/8 tsp. pepper
- 2 c. elbow macaroni
- Wipe chops with damp paper towels; trim excess fat.
- Place on rack in broiler pan.
- Broil on both sides until nicely browned. In hot oil in large skillet, saute onion and garlic, stirring occasionally, until tender, about 5 minutes.
- Add tomatoes, thyme, bay leaf, 3/4 teaspoon salt and pepper; mix.
- Boil 3 quarts water with 1 teaspoon salt.
- Add macaroni; cook for 10 minutes, or until tender; drain.
- Preheat oven to 350u0b0.
- Add macaroni to tomato mixture; mix.
- Arrange chops on top.
- Cover; bake for 40 minutes.
