Middle Eastern Spinach Turnover
- 260 g Spinach
- 1 small Onion
- Lemon
- pine nuts
- Salt, Pepper (Black or White)
- Pomegranate juice
- Olive oil
- Shop finely cut spinach (after removing stems), rub with salt and squeeze liquid out.
- Shop onion fine, rub with salt and pepper and add to spinach.
- Fry pine nuts in a bit of butter, add to spinach. add juice of one lemon and two tablespoons of Pomegranate juice.
- Add olive oil and Mix all together.
- On a flattened basic dough cut circular pieces, place a bit of mixture on the circular dough and fold creating a triangular turnovers
- Place on an oven sheet, brush turnovers with olive oil, place in a pre-heated oven (200 degree C) for about 12/15 minutes or until slightly brown.
- Can be eaten hot ot cold.
