Blue Cheese & Fig Toasts

  1. Preheat oven to 400
  2. Remove the stems and quarter the figs lengthwise.
  3. Simmer in the port until the wine is absorbed
  4. Remove from heat and set aside
  5. Cut the brioche into 1/4 to 3/8 inch thick slices
  6. Use a 1 1/2 inch diameter cutter to cut rounds from the brioche
  7. Place the rounds on a baking sheet and brush with olive oil.
  8. Bake until they start to brown, about 5 to 7 minutes. The toasts will become crisper as they cool
  9. Combine blue cheese, cream cheese and heavy cream. Blend well, adding additional cream as needed to make the mixture workable enough to pipe.
  10. Assembly:
  11. Use pastry bag fitted with a star tip to pipe a moderate amount of cheese mixture onto each cooled toast. Or use 2 spoons to place a dollop of cheese on each round. Garnish with a piece of fig and a small piece of walnut.
