Blue Cheese & Fig Toasts
- 4 oz small dried mission figs
- 1/2 cup port
- 1/2 loaf brioche or other sweetened egg bread
- 4 tsp olive oil
- 2 oz blue cheese
- 2 oz cream cheese
- 3 Tbsp heavy cream
- 2 oz walnuts toasted
- Preheat oven to 400
- Remove the stems and quarter the figs lengthwise.
- Simmer in the port until the wine is absorbed
- Remove from heat and set aside
- Cut the brioche into 1/4 to 3/8 inch thick slices
- Use a 1 1/2 inch diameter cutter to cut rounds from the brioche
- Place the rounds on a baking sheet and brush with olive oil.
- Bake until they start to brown, about 5 to 7 minutes. The toasts will become crisper as they cool
- Combine blue cheese, cream cheese and heavy cream. Blend well, adding additional cream as needed to make the mixture workable enough to pipe.
- Assembly:
- Use pastry bag fitted with a star tip to pipe a moderate amount of cheese mixture onto each cooled toast. Or use 2 spoons to place a dollop of cheese on each round. Garnish with a piece of fig and a small piece of walnut.
