Summer Pasta Primavera
- 1 lb. boneless, skinless chicken, cut in thin strips
- 1/2 tsp. salt (optional)
- Wesson no-stick cooking spray
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, cut in thin strips
- 1 tsp. minced garlic
- 1 1/2 c. sliced mushrooms
- 1 medium yellow summer squash, thinly sliced
- 1 tsp. basil
- 1/8 tsp. cayenne pepper
- 1 (26 oz.) jar Healthy Choice pasta sauce (any flavor)
- 1/2 (1 lb.) box Rotini pasta, cooked according to pkg. directions; rinsed and drained
- Season chicken with salt (optional).
- Spray non-stick Dutch oven or very large saucepan with cooking spray until bottom is well coated.
- Over high heat, stir fry chicken in pan until it is no longer pink; remove and set aside.
- Re-spray pan and over medium heat, saute onion, bell pepper and garlic until tender.
- Return chicken to pan with mushrooms, squash, basil and pepper; saute for 5 minutes.
- Stir in sauce and pasta; heat through and serve.
- Makes 6 to 8 servings.
