Summer Pasta Primavera

  1. Season chicken with salt (optional).
  2. Spray non-stick Dutch oven or very large saucepan with cooking spray until bottom is well coated.
  3. Over high heat, stir fry chicken in pan until it is no longer pink; remove and set aside.
  4. Re-spray pan and over medium heat, saute onion, bell pepper and garlic until tender.
  5. Return chicken to pan with mushrooms, squash, basil and pepper; saute for 5 minutes.
  6. Stir in sauce and pasta; heat through and serve.
  7. Makes 6 to 8 servings.
