Indonesian Fried Rice (Nasi Goreng)
- Cooked Brown Rice
- 2 Eggs (plus one per person on top)
- 1 tsp Coconut Oil
- 1 tbls Sesame Oil
- 2 Shallots
- 1 Bunch Green Onion
- 3 Cloves Garlic
- 3 Thai or Serano Peppers
- 1.25 lbs dark meat chopped up
- 1/2 tsp Ground Cumin
- 1/2 tsp Ground Coriander
- 1 tsp Ground Curry Powder
- pinch Salt
- pinch Pepper
- 2 tbls Soy Sauce
- 1 tblsp Fish Sauce
- Oil pan and saute shallot and garlic until browned (about 4-5 mins)
- In separate pan cook egg into omelet
- Add chicken and all dry spices and cook on HIGH heat turning often
- Add fish sauce, sesame oil, and soy sauce and keep stirring often on high heat
- Once chicken is cooked and rice and continue to cook for 10-15 mins
- Add shredded omelet egg and cook for 5 mins
- In separate pan, cook egg sunny side up
- Dish rice onto plate and top with egg (slice open yolk)
