Shannon'S Cookies
- 1 c. butter
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 2 tsp. baking powder
- 2 3/4 c. flour
- cookie cutters
- Preheat oven to 400u0b0.
- In large mixing bowl, cream together butter and sugar with an electric mixer.
- Beat in egg and vanilla extract.
- Add baking powder and flour, one cup at a time, mixing well after each addition.
- The dough will be very stiff; blend in last 3/4 cup flour by hand.
- Do not chill dough.
- Divide dough into two balls.
- On a floured surface, roll each ball into a circle 12-inches in diameter and 1/8-inch thick.
- Cut out cookie shapes, dipping cutters in flour before each use.
- Bake cookies on top rack of oven for 6 to 7 minutes, until cookies are lightly browned. Cool completely on wire racks.
- Frost and decorate as desired.
