Apple Cranberry Bread
- 2 cups white sugar
- 1 cup brown sugar
- 1 cup vegetable oil
- 2 cups apples, mashed (run through food processor first)
- 3 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup dried cranberries
- Preheat oven to 350u0b0F. Butter and flour two 9" loaf pans. Beat sugar and oil in large bowl until blended. Mix in mashed apple 1/2 cup at a time. In another bowl, mix flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder. Stir into apple mixture 1/2 cup at a time. Mix in cranberries.
- Divide batter between the two loaf pans. Bake until tester inserted into center comes out clean, about 1 hour 20 minutes.
