Angel Hair Pasta With Shrimp
- 1 1/2 lbs. angel hair pasta
- 4 Tbls. butter or margarine
- 1 cup olive oil
- 1 bunch of sliced green onions
- 2 garlic cloves minced
- 10 plum tomatoes, seeded & chopped
- 2 1/2 cups white wine
- juice from 2 lemons fresh
- 1 1/2 lbs. shrimp
- 1 cup chopped fresh parsley
- 1 can of quartered artichoke hearts drained (optional)
- 1 small jar of capers drained (optional)
- Salt & Pepper to Taste
- Cook pasta in large kettle of boiling water until al dente. Drain well and keep warm. While pasta is cooking, put butter and oil in heavy skilled over medium heat. Add green onions, garlic, tomatoes, and wine. Cook, stirring, until mixture boils. Boil gently for 2 minutes. Add lemon juice, shrimp, and parsley (and artichoke hearts & capers if desired). Cook, stirring gently, just until shrimp is cooked (don't over cook). Season to taste with salt and pepper. Spoon sauce over pasta. Lift and mix pasta gently.
