Grilled Vegetables
- 1 medium sized eggplant
- 2 summer squash
- 2 zuchini
- 2 peppers, red, green, yellow, orange or a combo
- 1 medium sized red onion
- 4-5 cloves of garlic, halved lengthwise
- 1/4 cup of olive oil
- coarse salt to taste,
- fresh parsley to taste
- sprigs from rosemary
- a lemon
- cube the vegetables. cut the onions in half moon slices and slice the garlic lengthwise.
- in a large bowl, add the veggies with the oil and the seasonings. Toss them by hand.
- When the grill is hot, add all ingredients to the grill, either in a foil pouch or directly on the surface. When the vegetables have nice color and are soft, turn them out on a serving dish. One may add shrimp or chicken breast if. A generous squeeze of lemon brightens the flavors too. desired.
