Barbecue Sandwiches(Uses Leftover Prepared Roast.)
- 3 1/2 to 4 c. prepared roast, cut into 1-inch thinly and diagonally sliced strips
- 1 c. onion, chopped
- 2 Tbsp. butter or margarine
- 1 1/2 c. catsup
- 1/3 c. brown sugar, firmly packed
- 1 Tbsp. dry mustard or 2 Tbsp. prepared mustard
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- pinch of garlic powder
- 1/4 to 1/2 tsp. chili powder
- 2 to 3 Tbsp. onion powder
- 1/8 tsp. cloves
- 2 Tbsp. lemon juice or vinegar
- 1 Tbsp. Worcestershire sauce
- 2 drops red cake coloring (optional, for a richer appearance)
- 5 to 6 hamburger buns
- Slice roast and set aside.
- In a large skillet or saucepan, saute onion in butter until tender.
- Stir in remaining ingredients in order as given.
- Heat to boiling, then reduce heat.
- Simmer, covered, for about 30 to 45 minutes.
- Add beef and simmer an additional 15 minutes.
- Serve on warm hamburger buns.
- Yield:
- 5 to 6 servings.
