Family Birthday Chocolate Cake
- 2 1/2 cups sugar
- 2 1/2 c flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 c chopped pecans
- 6 eggs
- 6 bars of bittersweet chocolate
- 16 tbsp butter
- 1 c milk
- 1 tbsp vanilla
- 1/2 c sweet wine (concord)
- 1 c heavy cream
- Powdered sugar
- 6 Tbsp butter
- 3 Tbsp Cocoa powder
- 14 c milk
- 4 tbsp powdered confectiners sugar
- Separate eggs. Whip yolks with the sugar. Egg whites till stiff. Melt butter and chocolate on low heat. Cool and add to the egg yolks. Add flour, vanilla and baking powder and soda. In a blender add milk and nuts. Add to the flour mixture. Mix in the wine using the mixer. Last fold in egg whites. Bake in the oven at 350 degrees for about one hour or untill center is not liquid. When cool cover with the whipped heavy cream mixed with powder sugar and vanilla. Decorate with chocolate drippings of the cocoa, butter and sugar and milk mixture. Prepare by heating on low temperature and cooling.
